It is so good to be back!
For the last week and a half my family has been on vacation. We have a cottage at a Christian campground and over the past week it was the campgrounds family camp. Hundreds of people from all over Ontario, a few travel even further, descend upon this campground for one week in July, to come together as families for renewal and refreshment. It is a fabulous time to connect with family and friends and there are also programs all week long for every age group. My kids woke up each morning excited to head off their kids programs and my wife and I enjoyed the Bible Study sessions led by the speaker for the week, Jim Lyon, from Madison Park Church in Anderson, Indiana.
My wife was actually the director for the entire family camp, so she was kept busy all week, making sure that everything ran smoothly. It was her second year as the director and she did a fantastic job. There are a number of ‘community building’ events throughout the week and I led a couple of them. I gave two cookingclasses, one on canapes and another on Thai cuisine. What a great time to be able to share some cooking tips in this way and everyone who came got a bite to eat and the recipes as well. It was a lot of fun and a highlight of the week for me.
Even though it was a great week, it is nice to be home. I have been thinking all week about what my first post would be once I got back. Since it has been so hot, I decided that a frozen treat is in order. One of my absolute favourite flavour combinations is pineapple and coconut and these Pina Colada Creamsicles will make you feel like you are at an island paradise.
This is the third popsicle I have made since I got these popsicle molds. The first two were: Strawberry Paletasand Mango Lassi Popsicle.
I have received many inquiries regarding where I got these molds. I spent a great deal of time searching for the exact type of mold. I knew I wanted a classic popsicle shape that used wooden sticks and went from store to store looking for the perfect shape. It seemed like I would be out of luck, as everything was either round, star shaped or something different. I came home and decided to check online to see if I could order what I wanted. It did not take long as I quite quickly found EXACTLY what I was looking for.
